Ingredients:
2 cups flour
1/2 cup sugar
1/4 teaspoon salt
2 teaspoons baking powder
3/4 cup raisins
1 stick of margarine, cut into small pieces
2 eggs
1/2 cup plus 1 tablespoon milk
(I also added about 10 drops of green food coloring 'cause come on, it's St Paddy's Day!)
Preheat oven to 350. Mix dry ingredients and raisins in a medium sized bowl. Add margarine and mix with a pastry blender or your fingers until evenly blended. Whisk together 1 egg and 1/2 cup milk in a small bowl. Gradually stir into flour mixture until a dough forms, using your hands if necessary. Do not overwork.
Drop 1/4 cup mounds of dough onto an ungreased baking sheet. Beat remaining egg and 1 T of milk in a small bowl to make egg wash. Lightly brush each mound with wash.
Bake scones for 20-23 minutes or until lightly golden brown.
Before baking...
Straight out of the oven!
So I got a little careless with the egg wash...
The Verdict: Yummy! Though more like a muffin top than a true scone, it was still a baked good and therefore will get few complaints from me! The entire family ate them up for breakfast this morning. Livie looked at me funny, as in "you really want me to eat something THIS color", but once she got to the raisins she was hooked. Jack thought the whole thing was hilarious :)
